  • 1½ medium200 gTomatoessliced
  • ½ medium60 gRed onionthinly sliced into rings

Steps

  1. Wrap the tofu slabs in a clean towel, set a heavy pan on top and press for 20 minutes to remove moisture.
  2. Meanwhile, make the glaze: in a shallow dish whisk the soy sauce, maple syrup, cider vinegar, smoked paprika, garlic powder and half of the canola oil.
  3. Lay the pressed tofu in the glaze, turn to coat, and let it marinate for 15 minutes, turning once.
  4. While the tofu marinates, make the smash: in a bowl mash the edamame and avocado with the lime juice, salt and black pepper until chunky-creamy.
  5. Preheat the grill to medium-high, about 425°F (220°C), and brush the grates with the remaining half of the canola oil.
  6. Grill the tofu slabs 4 to 5 minutes per side, brushing with any leftover glaze, until well marked and hot through.
  7. Toast the whole-wheat bread slices on the cooler side of the grill for about 1 minute per side.
  8. Build each burger: spread a bread slice with the edamame-avocado smash, add romaine, a tofu slab, tomato and red onion, then top with a second bread slice.
