- 1¾ tsp4 gPaprika (sweet or smoked)
- 1 tsp2 gGround cumin
- ½ tsp1 gBlack pepper
- ¼ tsp2 gSalt
- 1½ tbsp20 gCanola oil

- 2 medium240 gTomatoessliced
- ½ medium60 gRed onionthinly sliced into rings
- 1½ tbsp20 gYellow mustard
Steps
- Prepare the toppings first: wash and dry the romaine leaves, slice the tomato and cut the red onion into thin rings; refrigerate until serving.
- Heat half of the canola oil in a large skillet over medium heat. Add the chopped yellow onion, mushrooms and garlic and cook, stirring, until the mushrooms have released their liquid and browned, about 8 minutes. Transfer to a large bowl and let cool for 5 minutes; set the skillet aside.
- Add the black beans to the bowl and mash with a fork or potato masher until mostly broken down with some chunky pieces.
- Pulse the oats in a blender until coarse, then stir them into the bean mixture along with the paprika, cumin, black pepper and salt.
- Stir in the egg and cheddar until evenly combined. Shape into 4 patties about 3/4 inch thick and chill for 15 minutes to firm up.
- Heat the remaining half of the canola oil in the skillet over medium heat. Cook the patties until deeply browned and crisp, 5 to 6 minutes per side, turning gently, until the center reaches 160°F (71°C).
- Wrap each patty in romaine leaves with a spread of mustard, slices of tomato and rings of red onion, and serve right away.
