- 2 cloves6 gGarlicminced
- 2 tbsp30 gOlive oil
- 2⅛ tsp10 gUnsalted butter
- ¾ cup180 gLow-sodium chicken broth
- 1 tbsp15 gYellow mustard
- 2 tsp10 gApple cider vinegar
- 1 tsp1 gDried thyme
- ¾ tsp2 gPaprika (sweet or smoked)
- ¾ tsp4 gSalt
- ½ tsp1 gBlack pepper
Steps
- Heat half the olive oil in a large lidded skillet over medium heat. Add the potatoes and a quarter of the salt, cover and cook 12 minutes, stirring occasionally, until nearly tender.
- Add the green beans to the potatoes, cover and cook 5 to 6 minutes more until both are tender and lightly browned. Transfer to a platter and keep warm.
- Season the pork chops with the paprika, half the thyme, the black pepper and half the salt.
- Heat the remaining olive oil in the skillet over medium-high heat. Sear the pork chops 4 to 5 minutes per side until they reach 145°F (63°C) inside. Move to a plate and rest at least 3 minutes.
- Lower the heat to medium and melt the butter in the skillet. Add the onion and apple and cook 5 minutes until softened and golden. Stir in the garlic for 30 seconds.
- Add the chicken broth, mustard, cider vinegar, the remaining thyme and the remaining salt, scraping up the browned bits. Simmer 3 minutes until slightly thickened.
- Return the pork chops and any juices to the skillet to warm briefly, then serve with the apples, onions and sauce spooned over, alongside the potatoes and green beans.
