Steps
- In a large bowl, soak the bread in the milk for 5 minutes, then mash into a paste.
- Add the beef, pork, egg, parmesan, garlic, parsley, oregano, two-thirds of the salt and the black pepper; mix gently with your hands just until combined.
- Roll the mixture into 20 balls about 1.5 inches wide and set them on a plate.
- Heat half of the olive oil in a large skillet over medium heat. Add the meatballs and brown on all sides, turning often, about 8 minutes.
- Cover the skillet, lower the heat to medium-low and cook 6 to 8 minutes more, until the meatballs reach 160°F (71°C) in the center. Transfer to a plate.
- While the meatballs cook, put the kale in a bowl with the lemon juice, the remaining half of the olive oil and the remaining third of the salt; massage with your hands for 2 minutes until the kale softens.
- Toss the apple, red onion and walnuts into the kale.
- Wipe out the skillet and warm the pita wedges in it over medium heat for 1 to 2 minutes per side, until toasty.
- Serve the meatballs with the kale salad and warm pita.
