  • 3 tbsp60 gMaple syrup

Steps

  1. Preheat the oven to 425°F (220°C). Brush a rimmed sheet pan (about 13x18 inches) with half of the canola oil.
  2. Mash half of the banana in a large bowl; thinly slice the remaining half of the banana and set it aside.
  3. In a blender, grind the oats into a coarse flour and tip it into a separate bowl.
  4. To the oat flour, add the whole wheat flour, the unsweetened cocoa powder, the baking powder, the salt and half of the cinnamon; whisk until the cocoa is evenly blended with no lumps.
  5. To the mashed banana, whisk in the eggs, almond milk, vanilla and the remaining half of the canola oil until smooth.
  6. Stir the cocoa-oat dry mixture into the banana mixture just until no dry streaks remain; let the batter rest 5 minutes to thicken.
  7. Spread the batter evenly on the prepared pan. Top with the sliced banana and the walnuts.
  8. Bake 14 to 16 minutes, until the center springs back and an instant-read thermometer reads 160°F (71°C) in the middle.
  9. While it bakes, warm the maple syrup with the remaining half of the cinnamon in a small saucepan over low heat for 1 minute.
  10. Cool the pancake 3 minutes, cut into 8 squares, and serve 2 per plate with the warm cinnamon maple syrup drizzled over.
