Steps
- Bring 400 g of the water and the rice to a boil in a saucepan, cover, reduce heat to low and simmer 15 minutes; rest off the heat, covered, 10 minutes.
- While the rice cooks, slice the cabbage, mushrooms, red onion and green onion, keeping the green onion whites and greens separate; mince the garlic and grate the ginger.
- Make the sauce: in a small bowl whisk the soy sauce, toasted sesame oil, brown sugar, cider vinegar, cornstarch, red pepper flakes and the remaining 60 g of water.
- Heat half the canola oil in a large skillet over high heat. Add the shrimp in one layer and cook 1 to 2 minutes per side until pink and opaque (145°F/63°C); move the shrimp to a plate.
- Add the remaining half of the canola oil to the skillet. Add the mushrooms and cook undisturbed 3 minutes until browned, then stir in the red onion and cook 2 minutes.
- Add the garlic, ginger and green onion whites and stir 30 seconds until fragrant.
- Add the cabbage and stir-fry 3 to 4 minutes until wilted but still crisp at the edges.
- Return the shrimp to the skillet, stir the sauce and pour it in, then toss 1 minute until glossy and thickened.
- Fluff the rice and serve the stir-fry over it, topped with the green onion greens and toasted sesame seeds.
