  • 2 cups chopped250 gZucchinidiced
  • ⅔ cup chopped40 gFresh parsleyfinely chopped
  • 2 tsp2 gDried oregano
  • 3 cloves9 gGarlicminced
  • ½ tsp1 gCrushed red pepper
  • 2 tbsp30 gApple cider vinegar
  • 3 tbsp40 gOlive oil
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Make the chimichurri first: in a small bowl stir the parsley, oregano, garlic, red pepper flakes, cider vinegar, olive oil and one quarter of the salt; set aside so the flavors meld.
  2. Pat the tofu cubes dry, then toss them in a bowl with the cornstarch, smoked paprika and one quarter of the salt until evenly coated.
  3. Heat half of the canola oil in a large skillet over medium-high heat. Add the tofu in one layer and cook 10 to 12 minutes, turning, until crisp and golden on all sides; move it to a plate.
  4. Add the remaining half of the canola oil to the skillet, then the zucchini and cherry tomatoes with one quarter of the salt. Cook 5 to 6 minutes until the zucchini is tender and the tomatoes blister; transfer to the plate with the tofu.
  5. Wipe out the skillet, add the water, milk and the remaining quarter of the salt, and bring to a simmer over medium heat. Stir in the oats and cook 5 to 7 minutes, stirring often, until thick and creamy.
  6. Take the oats off the heat and stir in the cheddar and black pepper until melted.
  7. Divide the cheesy oats among four bowls, top with the tofu, zucchini and tomatoes, and spoon the chimichurri over each bowl.
