Steps

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
  2. On the sheet pan, toss the zucchini, bell pepper and red onion with 15 g (three-fifths) of the olive oil, the paprika, the cumin, the black pepper and half of the salt. Spread in one layer.
  3. Roast for 15 minutes, then stir in the kale and roast 5 minutes more, until the vegetables are browned at the edges and the kale has wilted.
  4. While the vegetables roast, make the hummus: blend the chickpeas, tahini, lemon juice, garlic, the remaining half of the salt and the water in a food processor until smooth, scraping down the sides as needed.
  5. Take the vegetables out and turn the oven to broil. Lay the bread on a second sheet pan and brush the tops with the remaining 10 g (two-fifths) of the olive oil; broil 1 to 2 minutes until golden.
  6. Spread the hummus over the toasted side of each slice of bread.
  7. Pile the roasted vegetables onto four of the hummus slices and scatter the feta over the vegetables.
  8. Broil the vegetable-topped slices 1 to 2 minutes, until the feta softens and browns in spots, watching closely.
  9. Close each melt with a remaining hummus slice, hummus side down, cut in half and serve hot.
