Ingredients

  • 1 cup125 gRaspberries
  • ¾ cup sections200 gGrapefruitthree-quarters juiced, one-quarter cut into wedges
  • 1 tbsp20 gHoney
  • ¼ cup60 gWater
  • ½ tsp0.5 gDried rosemary
  • 1 tbsp15 gLime juice
  • 1¼ cups (300 ml)300 gSparkling water (club soda)chilled

Steps

  1. Chill the sparkling water (club soda) in the fridge until you are ready to pour.
  2. Cut the grapefruit: squeeze about three-quarters of it for juice and cut the remaining quarter into 2 wedges for garnish.
  3. In a small pot, warm the water, honey and dried rosemary over medium heat, stirring until the honey dissolves, about 2 minutes. Remove from heat, steep 5 minutes, then strain out the rosemary and chill the syrup about 15 minutes.
  4. In a pitcher, muddle the raspberries until juicy and broken down.
  5. Stir the grapefruit juice, lime juice and cooled rosemary-honey syrup into the raspberries, then press through a fine strainer if you prefer it seedless.
  6. Divide the raspberry base evenly between 2 glasses filled with ice.
  7. Top each glass with half of the chilled sparkling water (club soda) and stir gently.
  8. Garnish each glass with a grapefruit wedge and serve right away.
