- 3½ tbsp45 gOlive oil
- 1½ tbsp15 gCaperschopped
- 2 tbsp30 gLemon juice
- 1½ tsp3 gLemon zest
- ¾ tsp4 gSalt
- ¾ tsp2 gBlack pepper
Steps
- Preheat the oven to 425°F (220°C) and line a large rimmed sheet pan with parchment.
- Toss the sweet potato, Brussels sprouts and red onion with half the olive oil, one third of the salt and half the black pepper. Spread them on the sheet pan and roast for 15 minutes.
- Meanwhile, in a large bowl, stir the breadcrumbs into the milk and let them soak for 5 minutes.
- Add the pork, egg, Parmesan, half the garlic, half the parsley, the thyme, another third of the salt and the remaining black pepper to the soaked breadcrumbs. Mix gently with your hands until just combined, then roll into 20 balls. Wash your hands after handling the raw meat.
- Take out the pan, stir the vegetables and push them to the edges. Set the meatballs in the center and roast for 18 to 20 minutes, until the vegetables are browned and the meatballs reach 160°F (71°C) inside.
- While they roast, make the salsa verde: stir together the remaining parsley, remaining garlic, capers, lemon juice, lemon zest, the remaining olive oil and the remaining salt.
- Divide the roasted vegetables and meatballs among four plates and spoon the salsa verde over the meatballs.
