- 2 containers (6 oz)340 gPlain Greek yogurt, nonfat
- 1½ tbsp30 gHoney

Steps
- Preheat the oven to 425°F (220°C). Melt the butter and brush a silicone or metal oven waffle pan lightly with a little of it, reserving the rest for the batter.
- In a large bowl, whisk the all-purpose flour, whole wheat flour, baking powder, salt and half of the cinnamon.
- In a second bowl, mash two-thirds of the banana until smooth, then whisk in the egg, milk, remaining melted butter and vanilla.
- Pour the banana mixture into the all-purpose and whole wheat flour mixture and stir just until no dry streaks remain; a few lumps are fine.
- Spoon the batter into the waffle pan wells, filling them almost to the top.
- Bake 15 to 18 minutes, until the waffles are golden at the edges and a toothpick comes out clean; bake in batches if your pan is small.
- While the waffles bake, stir the Greek yogurt with the honey and the remaining half of the cinnamon.
- Slice the remaining third of the banana.
- Let the waffles rest in the pan 2 minutes, then turn them out and top with the cinnamon yogurt, banana slices and pecans.
