Steps
- Prep first: slice the pork chop into thin strips, cut the broccoli, slice the carrot, grate the ginger, mince the garlic and slice the green onion.
- Put the rice and 375 g of the water in a pot, bring to a boil, cover and simmer on low for 15 minutes; rest off the heat, covered, while you stir-fry.
- Toss the pork with half of the cornstarch in a bowl.
- Make the sauce: whisk the orange juice, lime juice, soy sauce, honey, ginger, garlic, red pepper flakes, toasted sesame oil and the remaining half of the cornstarch in a small bowl.
- Heat half of the canola oil in a large skillet over high heat. Sear the pork in one layer, 2 to 3 minutes per side, until it reaches 145°F (63°C); move to a plate and rest 3 minutes.
- Add the remaining half of the canola oil to the skillet, then the carrot and broccoli; stir-fry 2 minutes. Add the remaining 45 g of the water, cover and steam 2 minutes until crisp-tender.
- Stir the sauce, pour it into the skillet and stir until it bubbles and turns glossy, about 1 minute. Return the pork and toss to coat.
- Fluff the rice and serve the stir-fry over it, topped with the green onion and sesame seeds.
