  • 3½ cups sliced250 gWhite mushroomssliced
  • 4 cloves12 gGarlicminced
  • ¾ tsp1 gDried rosemarycrumbled
  • 10½ oz300 gWhole-wheat pasta, drypenne
  • 4 cups950 gWater
  • ¾ tsp5 gSalt
  • 1¼ cups150 gShelled edamame, frozen
  • 5 cups loosely packed150 gBaby spinach
  • ½ tsp1 gBlack pepper
  • ½ cup leaves10 gFresh basiltorn

Steps

  1. Press the tofu between towels for 10 minutes. Cut half of the tofu into 3/4-inch cubes and break the other half into chunks. Slice the mushrooms, mince the garlic and tear the basil.
  2. Make the tofu cream: blend the tofu chunks with the milk, Parmesan, lemon juice and nutmeg in a blender until completely smooth. Set aside.
  3. Heat one-third of the olive oil in a large, wide pot over medium-high heat. Add the tofu cubes with a pinch of the salt and sear 8 to 10 minutes, turning, until golden. Move them to a plate.
  4. Add the remaining olive oil and the mushrooms to the pot. Cook 6 to 7 minutes, stirring only occasionally, until browned. Stir in the garlic and rosemary for 30 seconds.
  5. Add the whole wheat penne, the water and the rest of the salt. Bring to a boil, then simmer uncovered, stirring often, about 10 minutes until the pasta is almost al dente and most of the water is absorbed.
  6. Stir in the edamame and simmer 2 minutes more, until the pasta is al dente and the edamame is hot.
  7. Lower the heat and stir in the tofu cream; warm 2 minutes, stirring, until glossy and clinging to the pasta. Add the spinach by handfuls until wilted.
  8. Fold in the seared tofu cubes and the black pepper. Divide among bowls and top with the basil.
