No-Bake Cocoa Walnut Date Bars

Dense, fudgy pressed bars with deep cocoa flavor, buttery walnuts and a chewy date base with a hint of salt.

No-Bake Cocoa Walnut Date Bars

Ingredients

  • ⅔ cup chopped80 gWalnuts
  • 3½ tbsp whole30 gAlmonds
  • 5 dates120 gMedjool dates, pittedchopped
  • 2 tbsp32 gAlmond butter, no salt added
  • 3 tbsp15 gUnsweetened cocoa powder
  • 1 tsp4 gVanilla extract
  • ⅛ tsp0.5 gSalt
  • 2 tsp10 gWater

Steps

  1. Line a small loaf pan or container, about 8 by 4 inches, with parchment, leaving some overhang.
  2. Chop the walnuts and almonds coarsely by hand, or pulse them in a food processor until they look like coarse crumbs with a few small pieces left; set aside.
  3. Put the dates and almond butter in a food processor (or mash very well in a bowl with a fork) and blend until smooth and sticky.
  4. Add the unsweetened cocoa powder, vanilla and salt to the date paste and blend until the cocoa powder is fully mixed in and the paste is evenly dark.
  5. Add the chopped walnuts and almonds to the cocoa-date paste and pulse or stir until evenly combined; if it feels too dry to hold together when pinched, add the water a little at a time.
  6. Press the mixture firmly and evenly into the lined pan, using the back of a spoon or the bottom of a glass to pack it tight.
  7. Chill in the fridge for 1 hour until firm.
  8. Lift out by the parchment and cut into 4 bars. Keep leftovers covered in the fridge.
