Dense, fudgy bars of sticky dates, toasty almonds and deep cocoa with a hint of salt and a chewy, truffle-like bite.

No-Bake Cocoa Almond Date Bars

Ingredients

  • 5 dates120 gMedjool dates, pittedroughly chopped
  • ½ cup whole60 gAlmonds
  • 2 tbsp32 gAlmond butter, no salt addedstirred well
  • 3 tbsp15 gUnsweetened cocoa powder
  • 1½ tbsp10 gSweetened shredded coconut
  • 1 tsp4 gVanilla extract
  • ⅛ tsp0.5 gSalt
  • 2 tsp10 gWater

Steps

  1. Line a small loaf pan or container, about 8 by 4 inches, with parchment, leaving some overhang.
  2. If the dates feel dry, soak them in warm tap water for 5 minutes, then drain well and pat dry; this soaking water is separate from the measured water.
  3. Add the almonds to a food processor and pulse until coarsely chopped, about the size of rice grains. Do not grind to a powder.
  4. Add the dates, the unsweetened cocoa powder and the salt to the processor and pulse until the mixture turns crumbly and dark.
  5. Add the almond butter, vanilla and measured water and process until the mixture clumps together when pinched.
  6. Press the mixture firmly and evenly into the lined pan with the back of a spoon or the bottom of a glass.
  7. Sprinkle the shredded coconut over the top and press it gently into the surface.
  8. Refrigerate for 1 hour until firm, then lift out by the parchment and cut into 4 bars. Keep chilled.
