  • 1 tsp4 gVanilla extract
  • ½ tsp1 gGround cinnamon
  • ½ tsp1 gGround nutmeg

  1. Chill the cold-brewed coffee in the fridge while you make the eggnog base.
  2. In a medium pot off the heat, whisk the unsweetened cocoa powder, cinnamon, nutmeg and salt with a splash of the whole milk to a smooth paste.
  3. Whisk the rest of the whole milk, the honey and the beaten eggs into the cocoa paste until smooth.
  4. Set the pot over medium-low heat and cook, stirring constantly, until the mixture thickens enough to coat a spoon and reaches 160°F (71°C) on a thermometer, about 8 to 10 minutes; do not let it boil.
  5. Take the pot off the heat, stir in the vanilla, and pour the eggnog into a bowl set in ice water, stirring for a few minutes to cool it quickly.
  6. Cover and refrigerate the eggnog until cold, at least 2 hours.
  7. Whisk the chilled eggnog briskly until frothy.
  8. Divide the chilled coffee among four glasses over ice, spoon the frothy mocha eggnog on top, and serve.
