- 1 tbsp20 gMiso paste

- 5 large165 gEgg whites
- ½ cup (120 ml)120 gMilk, 2%
- 2 cups loosely packed60 gBaby spinachroughly chopped
- 2 medium30 gGreen onionsthinly sliced
- 2¾ tsp8 gSesame seeds
- ½ tsp1 gBlack pepper
Steps
- Preheat the oven to 400°F (200°C). Before you start, peel and cube the sweet potato, slice the mushrooms and yellow onion, grate the ginger, chop the spinach and slice the green onions.
- Toss the sweet potato with half of the canola oil on a baking sheet and roast for 20 minutes, until just tender.
- Meanwhile, heat the remaining half of the canola oil in a large skillet over medium-high heat. Cook the yellow onion for 6 minutes until golden, then add the mushrooms and cook 8 minutes until browned and dry.
- Stir the ginger into the mushroom mixture for 30 seconds. Take the skillet off the heat and stir in the miso paste until it coats the mushrooms, then fold in the spinach so it wilts.
- In a large bowl, whisk the eggs, egg whites, milk, black pepper and half of the green onions into a custard.
- Lower the oven to 375°F (190°C). Spread the roasted sweet potato in a greased 9x13-inch baking dish, top with the miso mushroom mixture, and pour the custard over evenly.
- Sprinkle the sesame seeds over the top and bake 25 to 30 minutes, until the center is set and reaches 160°F (71°C).
- Rest 5 minutes, scatter the remaining half of the green onions over the top, and cut into 4 portions.
