  • 2 tbsp30 gWater

Steps

  1. If using wooden skewers, soak them in water for 30 minutes.
  2. Put the potato and carrot in a pot of cold water, bring to a boil and simmer 6 minutes until just tender at the edges; drain and cool slightly.
  3. Make the lemon pepper marinade: whisk the lemon zest, lemon juice, black pepper, cumin, garlic, two-thirds of the olive oil and two-thirds of the salt in a large bowl.
  4. Add the chicken breast to the marinade, toss to coat and let it sit 20 minutes while you prepare the rest.
  5. Toss the parboiled potato and carrot with the remaining one-third of the olive oil and the remaining one-third of the salt.
  6. Make the avocado crema: blend or mash the avocado, sour cream, lime juice, half of the cilantro and the 30 g water until smooth; chill until serving.
  7. Preheat the grill to medium-high, about 425°F (220°C), and oil the grates.
  8. Thread the chicken onto skewers, alternating with the jalapeño pieces. Thread the potato and carrot onto separate skewers.
  9. Grill the potato and carrot skewers 12 to 15 minutes, turning often, until browned and tender.
  10. Grill the chicken skewers 10 to 12 minutes, turning every few minutes, until charred in spots and the chicken reaches 165°F (74°C) inside.
  11. Scatter the remaining half of the cilantro over the skewers and serve with the avocado crema for dipping.
