  • 3 cloves9 gGarlicminced
  • 4¾ cups chopped100 gKalestems removed, chopped
  • 1½ tbsp20 gOlive oil
  • 2 tsp2 gDried thyme
  • ¾ tsp1 gDried rosemarycrumbled
  • ¼ cup chopped15 gFresh parsleychopped
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • ½ cup grated50 gGrated Parmesan

Steps

  1. Preheat the oven to 375°F (190°C) and set out a 9x13-inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it up, and cook until browned and it reaches 165°F (74°C), about 7 minutes. Transfer the turkey to the baking dish.
  3. In the same skillet, cook the onion, carrot and celery for 5 minutes. Add the mushrooms and cook until their liquid evaporates, about 6 minutes. Stir in the garlic, thyme and rosemary for 1 minute.
  4. Make the herb broth: pour the chicken broth into the skillet, add the salt and black pepper, and bring to a simmer, scraping up the browned bits.
  5. Add the rinsed brown rice and the kale to the baking dish with the turkey, then pour the hot herb broth and vegetables over it and stir to spread evenly.
  6. Cover tightly with foil and bake for 55 minutes, until the rice is tender and most of the broth is absorbed.
  7. Uncover, sprinkle the Parmesan over the top, and bake uncovered 10 to 15 minutes more until golden.
  8. Rest 5 minutes, scatter the parsley over the top and serve.
