  • 4 large200 gEggs
  • 8 slices256 gWhole-wheat bread8 slices
  • 1 cup diced150 gAvocado
  • 2 tsp10 gLemon juice
  • 2 cups loosely packed60 gBaby spinach
  • 1 medium120 gTomatoesthinly sliced
  • 2 oz60 gPart-skim mozzarellathinly sliced or shredded
  • 1 tbsp15 gOlive oil
  • ¾ tsp2 gGarlic powder
  • ¾ tsp2 gPaprika (sweet or smoked)
  • 1 tsp1 gDried thyme
  • ¼ tsp2 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Prepare first: slice the turkey breast into 4 thin cutlets, slice the tomato and the mozzarella, and set out the bread, eggs and spinach.
  2. Make the avocado spread: in a small bowl, mash the avocado with the lemon juice and half of the salt until mostly smooth. Set aside.
  3. Season the turkey: mix the garlic powder, paprika, thyme, the remaining half of the salt and half of the black pepper, and rub it over both sides of the turkey cutlets.
  4. Toast the bread slices in a large dry skillet over medium heat until crisp, about 2 minutes per side, then move them to a plate.
  5. Add half of the olive oil to the skillet over medium-high heat. Cook the turkey cutlets 3 to 4 minutes per side until browned and 165°F (74°C) inside. Top each cutlet with a quarter of the mozzarella, cover for 1 minute to melt, then move the turkey to a plate.
  6. Add the spinach to the same skillet and stir about 1 minute until just wilted; move it to the plate with the turkey.
  7. Lower the heat to medium, add the remaining half of the olive oil, and crack in the eggs. Season with the remaining half of the black pepper, fry 2 minutes, flip, and cook until the yolks are firm and the eggs reach 160°F (71°C).
  8. Assemble: spread the avocado spread over 4 of the toasted bread slices. Layer each with the spinach, a cheesy turkey cutlet, a fried egg and the tomato slices, then close with the remaining bread slices. Serve hot.
