- 4 cloves12 gGarlicminced
- 4 cups loosely packed120 gBaby spinach
- 2 cups420 gVegetable broth
- 2 tbsp30 gOlive oil
- 1 tbsp10 gCornstarch
- 2 tsp2 gDried thyme
- ¾ tsp1 gDried rosemarycrumbled
- ¼ cup chopped15 gFresh parsleychopped
- 1 tbsp15 gLemon juice
- ½ tsp3 gSalt
- ½ tsp1 gBlack pepper
Steps
- Preheat the oven to 400°F (200°C) and lightly oil a 9x13-inch baking dish using a little of the olive oil (about 1 teaspoon of the total).
- Heat half of the remaining olive oil in a large skillet over medium-high heat. Add the tofu and cook 8 minutes, turning, until golden on several sides; transfer to a plate.
- Add the rest of the olive oil and the onion to the skillet and cook 6 minutes until soft. Stir in the garlic, thyme and rosemary for 1 minute, then stir in the spinach until wilted. Take the skillet off the heat.
- Make the herb broth: whisk the cornstarch into the vegetable broth with the lemon juice, salt and black pepper until smooth.
- Layer half of the potato slices in the dish, then scatter the tofu, the edamame and the onion-spinach mixture over them. Top with the remaining half of the potato slices, overlapping them.
- Pour the herb broth evenly over the casserole, cover tightly with foil and bake 40 minutes.
- Uncover and bake 20 to 25 minutes more, until the potatoes are tender when pierced and the top is lightly browned and the broth has thickened.
- Rest 10 minutes, then sprinkle with the parsley and serve.
