  • 3 cups720 gLow-sodium chicken broth
  • 1½ medium150 gYellow oniondiced

  • 3¼ cups sliced225 gWhite mushroomssliced
  • 4¾ cups chopped100 gKalestems removed, chopped
  • 4 cloves12 gGarlicminced
  • 2 tsp2 gDried thyme
  • ¾ tsp1 gDried rosemarycrumbled
  • ¼ cup chopped15 gFresh parsleychopped
  • 2 tbsp30 gOlive oil
  • ⅔ cup50 gOld-fashioned rolled oats
  • ⅓ cup grated30 gGrated Parmesan
  • 1½ tbsp20 gUnsalted buttermelted
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. Season the pork with half the salt and half the black pepper.
  3. Heat half the olive oil in a large skillet over medium-high heat and brown the pork on all sides, about 5 minutes; it will finish in the oven. Transfer the pork to a plate.
  4. Add the remaining half of the olive oil, the onion, celery and mushrooms to the skillet and cook until the mushrooms brown, about 7 minutes. Stir in the garlic, thyme and rosemary for 1 minute.
  5. Pour in the chicken broth, scraping up the browned bits, and bring to a simmer to make the herb broth. Stir in the remaining half of the salt and black pepper.
  6. Spread the rice in the baking dish, scatter the kale over it, pour the hot herb broth and vegetables over top and stir to combine. Nestle the pork into the rice.
  7. Cover tightly with foil and bake for 45 minutes, until the rice is tender and most of the broth is absorbed.
  8. Meanwhile, make the oat crumb: toss the oats, parmesan and melted butter in a small bowl.
  9. Uncover the dish, sprinkle the oat crumb evenly over the top and bake uncovered 10 to 12 minutes more, until golden and the pork reaches 145°F (63°C).
  10. Let rest 5 minutes, then scatter the parsley over the top and serve.
