Steps

  1. Preheat the oven to 425°F (220°C) and line two sheet pans with parchment.

  3. Meanwhile, in a bowl mix the chicken-ground, egg, breadcrumbs, three-quarters of the parsley, half the garlic, half the thyme, a quarter of the salt and a pinch of the black pepper; shape into 20 balls and set them on the second pan.
  4. Toss the green beans onto the potato pan with a quarter of the salt, then put both pans in the oven and bake 18–20 minutes, until the vegetables are browned and the meatballs reach 165°F (74°C) inside.
  5. While they bake, heat the remaining olive oil and the butter in a large skillet over medium-high heat; cook the mushrooms and onion 8 minutes until browned.
  6. Stir in the remaining garlic and remaining thyme for 30 seconds, then sprinkle in the flour and stir 1 minute.
  7. Whisk in the chicken broth and simmer 4–5 minutes until thickened; off the heat, stir in the sour cream, the remaining salt and the remaining black pepper.
  8. Add the baked meatballs to the skillet and turn to coat in the mushroom sauce.
