  • 2½ tbsp40 gApple cider vinegar
  • 2 tsp10 gYellow mustard
  • 1½ tsp10 gHoney
  • 1 clove3 gGarlicminced

Steps

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
  2. Toss the sweet potato with one quarter of the olive oil, one quarter of the salt and one quarter of the black pepper, and spread it on one half of the pan.
  3. Rub the pork tenderloin with one quarter of the olive oil, then season it with the rosemary, garlic powder, half of the salt and half of the black pepper.
  4. Set the pork on the other half of the pan and roast until the sweet potato is tender and browned and the pork reaches 145°F (63°C) in the center, about 20 to 25 minutes.
  5. Scatter the walnuts on a corner of the pan for the last 5 minutes to toast them.
  6. Move the pork to a board and let it rest for at least 3 minutes, then cut it into bite-size pieces; let the sweet potato cool for a few minutes.
  7. While the pork roasts, make the herb vinaigrette: whisk the cider vinegar, mustard, honey, garlic, the remaining one quarter of the salt and the remaining one quarter of the black pepper, then whisk in the remaining half of the olive oil, the parsley and the mint.
  8. In a large bowl, combine the romaine, spinach and kale, add half of the vinaigrette and toss, squeezing the kale lightly so it softens.
  9. Add the apple, celery, red onion, sweet potato and pork, drizzle with the remaining half of the vinaigrette and toss.
  10. Top with the feta and toasted walnuts and serve right away.
