  • 3 cups720 gLow-sodium chicken broth
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper
  • 2 tbsp30 gLime juice
  • ⅔ cup chopped10 gFresh cilantrochopped

Steps

  1. Before you start cooking, dice the onion and carrot, mince the garlic, grate the ginger, cut the zucchini and green beans, rinse the red lentils and chop the cilantro.
  2. Heat the canola oil in a large pot over medium-high heat. Add the ground turkey and cook, breaking it up, until browned and cooked to 165°F (74°C), about 7 minutes. Transfer the turkey to a bowl, leaving the fat in the pot.
  3. Lower the heat to medium. Add the onion and carrot and cook until the onion softens, about 5 minutes.
  4. Stir in the garlic, ginger, curry powder, cumin and turmeric and cook until fragrant, about 1 minute.
  5. Add the canned tomatoes, chicken broth and red lentils. Bring to a boil, then cover and simmer for 10 minutes, stirring now and then.
  6. Stir in the green beans, zucchini and the browned turkey with its juices. Simmer uncovered until the lentils break down and the vegetables are tender, 10 to 12 minutes; add a splash of water if it gets too thick.
  7. Season with the salt and black pepper, then stir in the lime juice. Serve topped with the cilantro.
