Steps

  1. Prep first: cube the red potatoes, dice the onion and green bell pepper, mince the jalapeño and garlic, chop the cilantro, and drain and rinse the pinto beans and black-eyed peas.
  2. Heat the canola oil in a Dutch oven over medium heat. Add the onion and green bell pepper and cook, stirring, until soft, about 6 minutes.
  3. Add the jalapeño and garlic and cook 1 minute. Stir in the cumin, coriander, oregano, black pepper and salt and toast 30 seconds until fragrant.
  4. Add the red potatoes, green chiles and vegetable broth. Bring to a boil, then cover, lower the heat and simmer 15 minutes.
  5. Stir in the pinto beans, black-eyed peas and coconut milk. Simmer uncovered, stirring now and then, until the potatoes are tender and the chili thickens, about 15 minutes. Mash a few potato cubes against the pot to thicken it more.
  6. Stir in the spinach until wilted, about 1 minute, then turn off the heat and stir in the lime juice.
  7. Ladle into bowls and top with the cilantro.
