  • 2½ tbsp grated15 gFresh gingerpeeled and finely grated
  • ½ cup (120 ml)120 gOrange juice
  • 1 tbsp25 gHoney
  • 2¼ tsp6 gCornstarch
  • 2 tsp10 gLime juice
  • 2 cups495 gWaterdivided
  • 2 cups160 gOld-fashioned rolled oats
  • 1 cup (240 ml)240 gMilk, 2%
  • ½ tsp1 gGround cinnamon
  • ⅛ tsp1 gSalt
  • 3½ tbsp whole30 gAlmondsroughly chopped

Steps

  1. Prepare first: cut the pineapple, grate the ginger and chop the almonds. Divide the water: set aside a small portion (about 1 tablespoon) for the slurry and the rest for the oatmeal.
  2. In a medium pot over medium heat, toast the almonds, stirring, for 3 to 4 minutes until fragrant. Tip them into a small bowl and set aside.
  3. In the same pot, combine the pineapple, ginger, orange juice and honey. Bring to a simmer over medium heat and cook, stirring now and then, for 10 to 12 minutes until the pineapple is tender and the juices reduce slightly.
  4. Stir the cornstarch into the small reserved portion of water until smooth to make a slurry. Stir the slurry into the simmering pineapple and cook 1 to 2 minutes until glossy and thickened.
  5. Remove from the heat, stir in the lime juice and transfer the compote to a heatproof bowl. Rinse the pot.
  6. In the rinsed pot, bring the remaining water, the milk, the cinnamon and the salt to a gentle simmer over medium heat. Stir in the oats and cook, stirring often, for 5 to 6 minutes until thick and creamy.
  7. Divide the oatmeal among 4 bowls, spoon the warm compote over the top and scatter with the toasted almonds.
  8. Cool any leftover compote, then cover and refrigerate within 2 hours; use within 3 days. This compote is for the fridge only, not for canning or storing at room temperature.
