- 1 tbsp10 gCornstarch
- ⅓ cup90 gWater
- 2 tbsp28 gCanola oil
- 1¾ tsp8 gToasted sesame oil
- ½ tsp1 gCrushed red pepper
Steps
- Prepare first: slice the flank steak, shred the cabbage, slice the mushrooms and green onion (whites and greens separate), grate the ginger and mince the garlic.
- Soak the rice noodles in hot tap water for 8 to 10 minutes until pliable, then drain and set aside.
- Make the sauce: whisk the soy sauce, honey, cider vinegar, water, cornstarch, toasted sesame oil and red pepper flakes in a small bowl.
- Heat half of the canola oil in a large skillet over high heat. Sear the flank steak in a single layer, 1 to 2 minutes per side, until browned and it reaches 145°F (63°C); move it to a plate to rest for 3 minutes.
- Add the remaining half of the canola oil to the skillet. Cook the mushrooms for 4 minutes until browned, then add the cabbage and cook 3 to 4 minutes until wilted with crisp edges.
- Add the ginger, garlic and green onion whites and stir for 30 seconds until fragrant.
- Stir the sauce again and pour it in with the drained rice noodles and the flank steak with its juices; toss for 1 to 2 minutes until the sauce thickens and coats everything.
- Serve topped with the green onion greens.
