Steps
- Combine the rice with three-quarters of the water (360 g) in a saucepan, bring to a boil, cover and simmer on low for 15 minutes, then rest off the heat 5 minutes.
- While the rice cooks, make the sauce: whisk the soy sauce, toasted sesame oil, honey, cider vinegar, cornstarch, red pepper flakes and the remaining quarter of the water (120 g) in a small bowl.
- Prep all vegetables before heating the skillet: slice the bok choy stems and chop the leaves, trim the snow peas, mince the garlic, grate the ginger and slice the green onion, keeping whites and greens apart.
- Heat half the canola oil in a large skillet over high heat. Add the shrimp in one layer and cook 1 to 2 minutes per side until pink and opaque (145°F/63°C); transfer to a plate.
- Add the remaining half of the canola oil to the skillet. Stir-fry the bok choy stems and snow peas for 2 minutes.
- Add the garlic, ginger and green onion whites; stir-fry 30 seconds until fragrant.
- Add the bok choy leaves and spinach and toss for 1 minute until just wilted.
- Stir the sauce, pour it in, and return the shrimp; toss about 1 minute until the sauce thickens and coats everything.
- Serve over the rice, topped with the green onion greens and toasted sesame seeds.
