  • 6 cups loosely packed180 gBaby spinach
  • 1⅔ cups250 gCherry tomatoeshalved
  • 2 cups sliced200 gCucumberdiced
  • ½ medium50 gRed onionthinly sliced
  • ¼ cup chopped15 gFresh parsleychopped
  • 4 cloves12 gGarlicminced
  • ¼ cup50 gOlive oil
  • ¼ cup60 gLemon juice
  • 2 tsp4 gLemon zest
  • 1¼ tsp3 gPaprika (sweet or smoked)
  • ½ tsp1 gCrushed red pepper
  • ¾ tsp4 gSalt
  • ½ tsp1 gBlack pepper

Steps

  1. Prepare the vegetables first: halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, chop the parsley and mince the garlic, keeping a quarter of the garlic separate for the dressing.
  2. Make the dressing: in a large salad bowl, whisk two-thirds of the olive oil with the lemon juice, lemon zest, the reserved quarter of the garlic, half the salt and half the black pepper.
  3. Add the cannellini beans and red onion to the dressing and stir so they soak up the flavor while you cook the shrimp.
  4. Toss the shrimp with the paprika, red pepper flakes, the remaining half of the salt and the remaining half of the black pepper.
  5. Heat the remaining third of the olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook 1 to 2 minutes per side, adding the remaining three-quarters of the garlic for the last 30 seconds, until the shrimp are pink and opaque.
  6. Add the spinach, cherry tomatoes, cucumber and parsley to the bowl with the beans and toss gently to coat with the dressing.
  7. Divide the salad among 4 plates and top with the warm garlic shrimp, spooning any skillet juices over the top.
