Steps

  1. Prepare first: slice the red bell pepper, green bell pepper, yellow onion, bok choy and green onions, mince the garlic, and beat the eggs with the salt and black pepper in a bowl.
  2. Heat half of the canola oil in a large nonstick skillet over medium heat. Add the yellow onion, red bell pepper and green bell pepper and cook, stirring, until soft and lightly browned, 8 to 10 minutes. Transfer the yellow onion, red bell pepper and green bell pepper to a plate.
  3. Add the remaining half of the canola oil to the skillet. Add the garlic and cook 30 seconds, then add the bok choy and cook 3 minutes. Add the spinach and cook until wilted, about 1 minute.

  5. Wipe the skillet, set it over medium-low heat, and pour in the beaten eggs. Stir gently with a spatula into soft curds, about 3 minutes.
  6. Fold the cooked yellow onion, red bell pepper and green bell pepper back into the eggs and cook until the eggs are just set and reach 160°F (71°C).
  7. Toast the whole-wheat bread while the eggs finish.
