Garlicky Lemon Tahini Dressing with Toasted-Sesame Crunch

Ingredients

  • ¼ cup64 gTahinistirred well
  • 2 cloves6 gGarlicfinely grated
  • 2½ tbsp40 gLemon juice
  • 3½ tbsp50 gWaterice-cold
  • 1½ tsp7 gOlive oil
  • ¾ tsp5 gMaple syrup
  • ½ tsp1 gGround cumin
  • ¼ tsp1.5 gSalt
  • 2¾ tsp8 gSesame seeds
  • 1½ tbsp chopped6 gFresh parsleyfinely chopped

Steps

  1. Grate the garlic into a medium bowl, pour the lemon juice over it and add the salt; let it sit 5 minutes to mellow the garlic's bite.
  2. Add the tahini to the garlic and lemon juice and whisk; it will seize and thicken, which is normal.
  3. Whisk in the ice-cold water a little at a time until the dressing turns smooth, pale and pourable.
  4. Whisk in the olive oil, maple syrup and cumin until glossy.
  5. Stir in the parsley and the sesame seeds just before serving so they stay fresh and crunchy.
  6. Spoon over leafy salads; if the dressing thickens in the fridge, loosen it with a splash more cold water. Keeps covered and chilled up to 5 days.

Contains: Sesame.
