- 1 cup chopped150 gRed bell peppercut into strips

Steps
- Prepare the vegetables first: cut the broccoli and cauliflower into florets, slice the red bell pepper into strips, rinse the cherry tomatoes, and chill them while you make the dip.
- Warm half of the olive oil in a small skillet over medium-low heat, add the garlic, and cook 2 to 3 minutes, stirring, until pale golden and soft; take it off the heat so it doesn't brown further.
- In a food processor, combine the black-eyed peas, the garlic with its oil, the tahini, lemon juice, cumin and salt; process 1 minute.
- With the processor running, pour in the ice-cold water a little at a time and blend 2 to 3 minutes more, scraping down the sides, until very smooth.
- Add the dill and mint and pulse just until flecked green.
- Spread the hummus in a shallow bowl, drizzle with the remaining half of the olive oil and dust with the paprika.
- Serve with the broccoli, cauliflower, bell pepper strips and cherry tomatoes for dipping.
