Ingredients
- 5 dates120 gMedjool dates, pittedroughly chopped
- ½ cup chopped50 gWalnutscoarsely chopped
- ⅓ cup50 gDry-roasted peanuts, unsalteddivided
- 2½ tbsp14 gUnsweetened cocoa powder
- 2 tbsp32 gPeanut butter, no salt added
- ¾ tsp3 gVanilla extract
- ⅛ tsp0.5 gSalt
- 2 tsp10 gWateras needed
Steps
- Line a small plate or tray with parchment.
- Divide the dry-roasted peanuts in half. Finely chop one half of the dry-roasted peanuts and spread them on a plate for rolling. Roughly crush the other half of the dry-roasted peanuts and set them aside for the dough.
- Coarsely chop the walnuts by hand so they stay chunky, and set them aside.
- In a mixing bowl, mash the dates with a fork. Add the peanut butter, unsweetened cocoa powder, vanilla and salt, and knead with a sturdy spoon or your hands until a smooth, fudgy cocoa dough forms. If it's dry or crumbly, work in the water a teaspoon at a time.
- Fold the roughly crushed dry-roasted peanuts and the chopped walnuts into the cocoa dough until evenly mixed.
- Roll the dough into 12 balls, about a tablespoon each.
- Roll each ball in the finely chopped dry-roasted peanuts on the plate, pressing gently so they stick, and set on the lined tray.
- Chill the bites in the fridge for 30 minutes to firm up, then serve 3 bites per person. Store leftovers covered in the fridge for up to a week.
