  • ¾ cup180 gVegetable broth
  • 3 tbsp40 gUnsalted butter
  • 2 medium220 gYellow onionhalf diced, half thinly sliced into rings
  • 3 cloves9 gGarlicminced
  • ⅓ cup45 gAll-purpose flour
  • 1 tsp1 gDried thyme
  • ¼ tsp0.5 gGround nutmeg
  • 2⅛ tsp10 gLow-sodium soy sauce
  • ½ tsp3 gSalt
  • ½ tsp1 gBlack pepper
  • ⅓ cup40 gPlain dry breadcrumbs
  • ¼ cup grated25 gGrated Parmesan
  • 1½ tbsp20 gOlive oil

Steps

  1. Heat the oven to 425°F (220°C). Toss the sliced onion rings with 1 tablespoon of the flour, half the olive oil and a pinch of the salt, spread on a parchment-lined baking sheet and bake 15 to 20 minutes, stirring once, until golden and crisp. Lower the oven to 375°F (190°C).
  2. Meanwhile, bring a large pot of water to a boil, cook the green beans 4 minutes until bright green and tender-crisp, then drain and rinse under cold water.
  3. Melt the butter in a large oven-safe skillet over medium-high heat. Add the mushrooms and diced onion and cook 8 to 10 minutes until the mushrooms are browned and their liquid has cooked off. Stir in the garlic for 30 seconds.
  4. Sprinkle the remaining flour over the vegetables and stir 1 minute. Slowly whisk in the milk and vegetable broth, then add the thyme, nutmeg, soy sauce, remaining salt and the pepper. Simmer, stirring, 3 to 4 minutes until thick and creamy.
  5. Fold the green beans into the sauce. If your skillet is small, transfer everything to a 9x13-inch baking dish.
  6. Mix the breadcrumbs, Parmesan and remaining olive oil, then scatter over the casserole with the crisp onions.
  7. Bake 20 to 25 minutes until bubbling at the edges and golden on top. Rest 5 minutes before serving.
