  • 4 large132 gEgg whites
  • 2½ tbsp (35 ml)40 gMilk, 2%
  • 2½ medium300 gTomatoesseeded and diced
  • 2 cloves6 gGarlicminced
  • ½ cup leaves12 gFresh basiltorn
  • 2 tbsp chopped8 gFresh parsleychopped
  • 2 oz60 gPart-skim mozzarellashredded
  • 1¾ tsp8 gOlive oil
  • 1 tbsp16 gUnsalted butter
  • ¼ tsp2 gSalt
  • ½ tsp1 gBlack pepper
  • 1 whole330 gMangodiced
  • 1½ cups220 gBlueberries
  • 1 tbsp15 gLime juice
  • 2⅛ tsp chopped4 gFresh mintthinly sliced

Steps

  1. Make the fruit first: toss the mango, blueberries, lime juice and mint in a bowl and set aside.
  2. In a bowl, whisk the egg, egg-white, milk, half the salt and the black pepper until smooth and frothy.
  3. Heat the olive oil in a nonstick skillet over medium heat. Add the garlic and cook 30 seconds, then add the tomato and the remaining half of the salt and cook 2–3 minutes until just softened. Stir in the parsley, transfer the filling to a plate and wipe out the skillet.
  4. For each omelet, melt one quarter of the butter in the skillet over medium-low heat and pour in one quarter of the egg mixture. Stir gently, then let it set, lifting the edges so loose egg flows underneath, until the omelet is cooked through to 160°F (71°C) with no runny egg left, about 3 minutes.
  5. Spoon one quarter of the tomato filling over half the omelet, then scatter one quarter of the mozzarella and one quarter of the basil on top. Fold the omelet over, cook 30 seconds more to melt the cheese and slide it onto a plate.
  6. Repeat with the remaining butter, egg mixture, tomato filling, mozzarella and basil to make four omelets in all. Serve each omelet with a quarter of the fruit salad.
