  • ¼ cup25 gUnsweetened cocoa powder
  • 2½ tbsp30 gGranulated sugar
  • 2⅛ tsp10 gBaking powder
  • ½ tsp2 gBaking soda
  • ¼ tsp1.5 gSalt
  • 1½ cups (350 ml)360 gButtermilk, low-fat
  • ¼ cup (60 ml)60 gBrewed coffeecooled
  • 2 large100 gEggsseparated
  • 2 tbsp30 gUnsalted buttermelted and cooled, divided
  • 1¼ tsp5 gVanilla extract
  • 1⅔ cups pitted250 gSweet cherrieshalved
  • 2 medium260 gOrangesegmented
  • 1 container (6 oz)170 gPlain Greek yogurt, nonfat
  • 2 tbsp40 gMaple syrup

Steps

  1. In a bowl, pour the buttermilk and the cooled coffee over the oats and let soak for 10 minutes to soften.
  2. Meanwhile, in a large bowl, whisk together the flour, the unsweetened cocoa powder, the sugar, the baking powder, the baking soda and the salt until the cocoa has no lumps.
  3. Prepare the topping: toss the cherries and orange segments together, and stir the maple syrup into the Greek yogurt in a small bowl. Set both aside.
  4. Whisk the egg yolks, the vanilla and two-thirds of the melted butter into the soaked oat mixture, then stir it into the cocoa-flour mixture until just combined; a few lumps are fine.
  5. In a clean bowl, beat the egg whites to soft peaks, then gently fold them into the batter in two additions to keep it airy.
  6. Heat a large nonstick skillet over medium-low and brush lightly with some of the remaining one-third of the butter.
  7. Pour about 1/4 cup of batter per pancake and cook 2 to 3 minutes until bubbles form and the edges look set, then flip and cook 1 to 2 minutes more until the centers spring back and reach 160°F (71°C); brush the skillet with more of the remaining butter between batches until it is used up.
  8. Stack the pancakes on four plates, top with the maple yogurt and spoon over the cherries and orange.
