Fluffy Cocoa Banana Pancakes with Cherry Yogurt

Ingredients

  • 1½ cups190 gAll-purpose flour
  • ¼ cup25 gUnsweetened cocoa powder
  • 2 tbsp25 gGranulated sugar
  • 1¾ tsp8 gBaking powder
  • ½ tsp2 gBaking soda
  • ¼ tsp1.5 gSalt
  • 2 medium236 gBananamashed
  • 1½ cups (350 ml)360 gButtermilk, low-fat
  • 2 large100 gEggs
  • 2 tbsp30 gUnsalted buttermelted
  • 2 tsp8 gVanilla extract
  • 2 cups pitted300 gSweet cherrieshalved
  • 1 tbsp20 gHoney
  • 2 containers (6 oz)340 gPlain Greek yogurt, nonfat

Steps

  1. Make the topping first: in a small saucepan, warm the cherries with half the honey over medium heat for 5 minutes until juicy, then set aside.
  2. Stir the Greek yogurt with the remaining half of the honey and half the vanilla; chill until serving.
  3. In a large bowl, whisk the flour, unsweetened cocoa powder, sugar, baking powder, baking soda and salt until no cocoa streaks remain.
  4. In another bowl, whisk the mashed banana, buttermilk, egg, the remaining half of the vanilla and two-thirds of the melted butter.
  5. Pour the banana mixture into the cocoa-flour mixture and fold gently until just combined; a few lumps keep the pancakes fluffy. Rest the batter 5 minutes.
  6. Heat a nonstick skillet over medium-low and brush with a little of the remaining third of the melted butter.
  7. Pour about 1/4 cup batter per pancake and cook 2 to 3 minutes until bubbles form and edges look set, then flip and cook 1 to 2 minutes more until the centers spring back. Brush the skillet with more of the remaining butter between batches until it is used up.
  8. Stack the pancakes, spoon on the honey yogurt and top with the warm cherries.
