- 2 medium30 gGreen onionsthinly sliced
- ¼ cup30 gPumpkin seeds (pepitas)
Steps
- Preheat the oven to 425°F (220°C) and line two sheet pans with parchment.
- On the first pan, toss the potato-red chunks and the cauliflower with half the olive oil, half the curry powder, half the salt and the black pepper. Roast 15 minutes.
- Meanwhile, pat the tofu-firm cubes dry. In a bowl, toss them with the remaining half of the olive oil, then sprinkle with the cornstarch, the remaining half of the curry powder, the cumin and a pinch from the remaining salt, tossing until coated. Spread on the second pan.
- Put the tofu pan in the oven. After 10 minutes, flip the tofu, stir the potatoes and cauliflower, and scatter the edamame over the vegetables.
- Roast both pans 15 to 20 minutes more, until the potatoes are tender and golden and the tofu is crisp at the edges.
- While they roast, make the yogurt sauce: stir together the greek-yogurt, lime juice, garlic, half the cilantro and the rest of the salt. Thin with a spoonful of water if you like.
- Divide the potatoes, cauliflower and edamame among four bowls and top with the tofu.
- Spoon the yogurt sauce over each bowl and finish with the green onion, the pumpkin seeds and the remaining half of the cilantro.
