Steps

  1. Preheat the oven to 425°F (220°C) and line two sheet pans with parchment.
  2. Toss the sweet potato, cauliflower and red onion wedges with two-thirds of the olive oil, half the salt and half the black pepper; spread on one sheet pan and roast 15 minutes.
  3. Meanwhile, in a large bowl, mix the egg, oats, grated yellow onion, garlic, cumin, coriander, paprika, cinnamon, the remaining half of the salt and the remaining half of the black pepper; let sit 5 minutes so the oats soften.
  4. Add the ground pork to the bowl and mix gently with your hands until just combined; roll into about 20 balls and set them on the second sheet pan. Brush the meatballs with the remaining third of the olive oil.
  5. Stir the vegetables, then roast both pans together for 18 to 20 minutes, until the vegetables are browned and tender and the meatballs reach 160°F (71°C) in the center.
  6. While they roast, stir the Greek yogurt and lemon juice together in a small bowl.
  7. Serve the meatballs over the roasted vegetables, drizzled with the lemon yogurt and scattered with the mint.
