- 3½ tbsp45 gOlive oil
- 1¾ tsp4 gPaprika (sweet or smoked)
- ¾ tsp2 gGarlic powder
- ¾ tsp5 gSalt
- ½ tsp1 gBlack pepper
- ½ cup chopped30 gFresh parsleyfinely chopped
- 2 cloves6 gGarlicminced
- 1 tsp1 gDried oregano
- ¼ tsp0.5 gCrushed red pepper
- 1½ tbsp20 gApple cider vinegar
- 1 tbsp15 gLemon juice
- 1 tbsp15 gWater
Steps
- Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.
- Prepare the potato, brussels sprouts and red onion as noted. Divide the olive oil: use 25 g for the vegetables, reserve 20 g for the sauce.
- Toss the potato, brussels sprouts and red onion on the pan with the 25 g of olive oil, half the paprika, the garlic powder, half the salt and the black pepper. Roast 20 minutes.
- Meanwhile, mix the ground turkey with the remaining half of the paprika and one quarter of the salt.
- Push the vegetables to the edges, crumble the turkey into the center of the pan and roast 12 to 15 minutes, until the potatoes are crisp and the turkey reaches 165°F (74°C), breaking it up once.
- While the hash roasts, make the chimichurri: stir the parsley, garlic, oregano, red pepper flakes, cider vinegar, lemon juice, water, the reserved 20 g of olive oil and the remaining quarter of the salt in a small bowl. Let it stand.
- Make 4 shallow wells in the hash, crack an egg into each, then crack the remaining 2 eggs into two more wells. Bake 6 to 8 minutes, until the whites are set and the eggs reach 160°F (71°C).
- Divide the potato hash, turkey and eggs among 4 bowls and spoon the chimichurri over the top.
