- 2 tbsp27 gOlive oil
- ¼ cup60 gWater
- 1¼ tsp3 gPaprika (sweet or smoked)
- ¾ tsp2 gGarlic powder
- ½ tsp3 gSalt
- ½ tsp1 gBlack pepper
- 2 medium30 gGreen onionsthinly sliced
- 2⅛ tsp10 gHot sauce
Steps
- Prepare everything first: dice the red potatoes, red bell pepper and yellow onion, and thinly slice the green onions.
- Heat two-thirds of the olive oil in a large nonstick skillet over medium-high heat. Add the red potatoes in an even layer and cook 5 minutes without stirring until browned underneath.
- Add the water, cover and cook 5 minutes until the potatoes are just tender, then uncover and let any liquid cook off.
- Stir in the yellow onion and red bell pepper and cook 6–8 minutes, stirring now and then, until the potatoes are crisp and the vegetables are soft.
- Season the hash with the paprika, garlic powder, salt and black pepper, stir, then move it to a bowl and cover to keep warm.
- While the hash finishes, toast the whole-wheat bread slices in a toaster until crisp.
- Wipe out the skillet, heat the remaining one-third of the olive oil over medium heat, and crack in the eggs. Cover and cook 3–4 minutes until the whites are set and the yolks have thickened, or until the eggs reach 160°F (71°C) if you prefer them fully set.
- Lay two toast slices on each plate, pile the potato hash over the toast, and top each plate with a fried egg.
- Scatter the green onions over the eggs and finish with a few dashes of hot sauce.
