Steps
- Soak the rice noodles in very hot tap water for about 10 minutes until pliable, then drain and set aside.
- Make the chili garlic sauce: whisk the low-sodium soy sauce, honey, cider vinegar, red pepper flakes, measured water and 1 tablespoon (about a third) of the cornstarch in a small bowl.
- Toss the chicken thigh pieces with the remaining two-thirds of the cornstarch until evenly coated.
- Heat two-thirds of the canola oil in a large skillet over medium-high heat. Add the chicken in one layer and cook 6–8 minutes, turning, until crisp and golden and it reaches 165°F (74°C). Move to a plate.
- Add the remaining third of the canola oil to the skillet. Add the yellow onion wedges, red bell pepper and green bell pepper and cook 4–5 minutes until charred at the edges but still crisp.
- Add the garlic and ginger and stir 30 seconds until fragrant.
- Stir the chili garlic sauce, pour it into the skillet and simmer about 1 minute until glossy and thick. Return the chicken and toss to coat.
- Add the drained rice noodles and the toasted sesame oil and toss 1–2 minutes until the noodles are hot and coated.
- Serve topped with the sliced green onions and chopped peanuts.
