  • 3 cups720 gLow-sodium chicken broth
  • 1¾ cups400 gCoconut milk, cannedstirred well
  • 1¾ tsp10 gFish sauce
  • ¼ tsp2 gSalt
  • ½ tsp1 gBlack pepper
  • 2 tbsp30 gLime juice
  • ⅔ cup chopped10 gFresh cilantrochopped

Steps

  1. Prepare all vegetables and cube the pork before heating the pot.
  2. Season the pork with the salt and black pepper.
  3. Heat half the canola oil in a Dutch oven over medium-high heat. Sear the pork in one layer until browned on all sides, about 5 minutes; it will finish cooking in the soup. Move it to a plate.
  4. Add the remaining half of the canola oil, then the onion, carrot and celery. Cook, stirring, until the onion softens, about 6 minutes.
  5. Stir in the garlic, ginger, curry powder and turmeric and cook until fragrant, about 1 minute.
  6. Add the potato and chicken broth, scraping up the browned bits. Bring to a boil, then simmer, covered, until the potato is tender, about 15 minutes.
  7. Scoop out about half the vegetables with some broth, mash or blend them with the coconut milk until smooth, and stir this creamy mixture back into the pot.
  8. Return the pork and its juices to the pot and simmer gently until the pork reaches 145°F (63°C), about 5 minutes, then let the soup rest off the heat for 3 minutes.
  9. Stir in the fish sauce and lime juice. Ladle into bowls and top with the cilantro.
