- 2¾ cups (650 ml)700 gWhole milk
- ¼ cup20 gUnsweetened cocoa powder
- ¼ cup55 gGranulated sugar
- ⅛ tsp1 gSalt
- ¼ cup (60 ml)60 gOrange juice
- 1¼ tsp5 gVanilla extract
- 1 medium130 gOrangesegmented and chopped
- ¼ cup40 gSemisweet chocolate chipscoarsely chopped
Steps
- Before you start, coarsely chop the chocolate chips and set them aside for the topping; segment and chop the orange and keep it chilled.
- In a medium pot, bring the water to a boil, stir in the rice, cover and simmer on low for 10 minutes until the water is mostly absorbed.
- Meanwhile, put the unsweetened cocoa powder, sugar and salt in a bowl, add a splash of the whole milk and whisk into a smooth paste, then whisk in the rest of the whole milk to make the cocoa milk.
- Pour the cocoa milk into the pot with the rice and bring to a gentle simmer over medium-low heat.
- Simmer uncovered, stirring often so the bottom doesn't catch, for 25 to 30 minutes until the rice is tender and the pudding is thick and creamy.
- Take the pot off the heat and stir in the orange juice and vanilla.
- Divide the pudding among 4 bowls, press plastic wrap onto the surface and chill for at least 1.5 hours, until cold and set.
- To serve, top each bowl with a quarter of the chopped orange and a quarter of the chopped chocolate chips.
