Steps
- Prepare first: chop the onion, mince the garlic and jalapeño, grate the ginger, cube the red potatoes, cut the green beans and cut the cod fillet into 2-inch pieces. Keep the cod fillet pieces refrigerated until step 7.
- Heat the canola oil in a large pot over medium heat. Add the onion and cook, stirring, until soft and golden, about 8 minutes.
- Add the garlic, ginger and jalapeño and cook 1 minute until fragrant.
- Stir in the cumin, coriander, turmeric and chili powder and cook 30 seconds, then stir in the tomato paste and cook 1 minute more.
- Add the canned diced tomatoes, the water and half of the salt. Bring to a boil, scraping up any browned bits.
- Add the red potatoes, cover and simmer over medium-low heat until nearly tender, about 15 minutes, stirring now and then.
- Add the green beans and simmer, uncovered, 4 minutes. Sprinkle the cod fillet pieces with the remaining half of the salt and nestle the cod fillet pieces into the sauce in a single layer.
- Cover and simmer gently, without stirring, 6 to 8 minutes, until the cod fillet flakes easily and reaches 145°F (63°C).
- Gently stir in the lemon juice, sprinkle with the cilantro and serve.
