  • 4 dates96 gMedjool dates, pittedroughly chopped
  • 3½ tbsp30 gRaisins
  • 2 tbsp32 gAlmond butter, no salt addedwell stirred
  • 1⅛ tsp3 gGround cinnamon
  • ¼ tsp0.5 gGround cardamom
  • 1 tsp4 gVanilla extract
  • ⅛ tsp0.5 gSalt
  • 3½ tbsp20 gSweetened shredded coconut

Steps

  1. Line a small tray or plate with parchment and set it aside.
  2. Put the pecans in a food processor and pulse until finely chopped, like coarse crumbs.
  3. Add the dates, almond butter, cinnamon, cardamom, vanilla and salt, and process until the mixture clumps and holds together when pressed.
  4. Add the raisins and pulse a few times, just until they are mixed in but still mostly whole.
  5. Spread the coconut on a plate and stir a pinch of extra cinnamon from the jar in only if you like; the measured cinnamon is already in the dough.
  6. Scoop the dough into 12 bites, roll each into a ball between your palms, then roll each ball in the coconut to coat.
  7. Set the bites on the lined tray and chill for 30 minutes until firm. Serve 3 bites per person and keep leftovers covered in the fridge for up to a week.
