  • 2½ tbsp40 gAlmond butter, no salt added
  • 1 large50 gEggsbeaten
  • 1½ tbsp30 gHoney
  • ½ oz15 gChia seeds
  • ¼ cup (60 ml)60 gMilk, 2%
  • 1½ tsp4 gGround cinnamon
  • ½ tsp1 gGround ginger
  • 1 tsp4 gVanilla extract
  • ¾ tsp3 gBaking powder
  • ⅛ tsp1 gSalt
  • ¾ tsp3 gCanola oilfor greasing

Steps

  1. Preheat the oven to 350°F (175°C). Grease a small loaf pan or 6-inch square pan with the canola oil.
  2. Dice the pear and chop the almonds.
  3. In a large bowl, stir together the oats, chia seeds, cinnamon, ground ginger, baking powder and salt.
  4. In a second bowl, whisk the almond butter, honey, egg, milk and vanilla until smooth.
  5. Pour the almond butter mixture into the oat and chia seed mixture and stir until evenly moistened, then fold in the pear and half of the almonds. Let it sit 5 minutes so the chia seeds and oats absorb some liquid.
  6. Press the batter evenly into the pan and scatter the remaining half of the almonds on top, pressing them in lightly.
  7. Bake 25 to 28 minutes, until golden at the edges, set in the center and a toothpick comes out clean.
  8. Cool in the pan on a rack for 15 minutes, then lift out and cut into 4 bars.
