Steps

  1. Prepare first: slice the cabbage and mushrooms, mince the garlic, grate the ginger, and slice the green onion, keeping the whites and greens apart.
  2. Soak the rice noodles in hot tap water for 8 to 10 minutes until pliable, then drain.
  3. Make the chili garlic sauce: in a bowl, whisk the water, low-sodium soy sauce, hoisin sauce, cider vinegar, brown sugar, red pepper flakes and cornstarch until smooth. Set aside.
  4. Heat half of the canola oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until browned and it reaches 165°F (74°C), about 7 minutes. Transfer to a plate.
  5. Heat the remaining half of the canola oil in the skillet. Add the mushrooms and cook until browned, about 5 minutes.
  6. Add the cabbage and cook, tossing, until just wilted, about 3 minutes.
  7. Add the garlic, ginger and green onion whites and stir for 1 minute until fragrant.
  8. Return the turkey to the skillet and add the drained rice noodles. Stir the chili garlic sauce and pour it in. Toss for 2 minutes until the sauce thickens and coats the noodles.
  9. Off the heat, toss in the toasted sesame oil and lime juice, then top with the green onion greens and serve.
