Steps

  1. Preheat the oven to 375°F (190°C). Slice the potatoes, cut the cod and broccoli, and chop the onion, garlic and dill before you start the sauce.
  2. Melt the butter in a large saucepan over medium heat. Add the onion and cook 5 minutes until soft, then add the garlic for 30 seconds.
  3. Stir in the flour and cook 1 minute. Slowly whisk in the milk and the vegetable broth, and simmer, stirring, about 4 minutes until thickened.
  4. Off the heat, stir the mustard, thyme, salt and black pepper into the sauce. Then stir in the broccoli.
  5. Layer half of the potato slices in a 9x13-inch baking dish and spoon one third of the sauce over them. Add the remaining half of the potato slices and another third of the sauce.
  6. Cover with foil and bake 30 minutes, until the potatoes are nearly tender when pierced.
  7. Toss the cod with the lemon juice and half of the dill. Nestle the cod into the potatoes and spoon the remaining third of the sauce over the fish.
  8. Scatter the cheddar over the top and bake uncovered 18 to 20 minutes, until the cheese is golden and the cod flakes easily and reaches 145°F (63°C).
  9. Rest 5 minutes, then sprinkle with the remaining half of the dill and serve.
